For the past 4 years I have had the pleasure of teaching health-supportive cooking classes in the state of the art kitchen at the JCC in Manhattan (W. 76th & Amsterdam). Teaching people how to cook and inspiring them to create healthier meals is my true passion.

Healthy Gourmet Winter Meals - Wed, Jan 18, 7:00-9:30pm
Learn to make your own gourmet winter-inspired ‘fast food’ using seasonal ingredients, easy shortcuts, and awesome tips for eating healthy without breaking the bank. Recipes will not only be delicious but they’ll help you ward off winter colds by featuring key ingredients to boost your immunity! While sipping on Passion Fruit Cocktails, we’ll create: Mixed Baby Greens with Asian Pears, Toasted Almonds, and Homemade Vinaigrette, Spicy White Bean, Kale, and Roasted Vegetable Soup, Winter Barley Salad, Roasted Brussels Sprouts with Apples and Pinenuts, Ginger Honey Glazed Salmon, Soba Noodles with Tofu and Butternut Squash, and Pear-Berry Crisp. You’ll be amazed how easily and beautifully the meal comes together!

Eat to Beat: Inflammation - Mon, Feb 27, 7:00-9:30pm
Research has shown that many chronic diseases such as heart disease, arthritis, and cancer stem from inflammation in the body. In this class Jackie will guide you toward identifying key foods that fight inflammation and how to use them in your cooking. After a brief discussion of how to follow the anti-inflammatory diet promoted by many renowned doctors across the country, we’ll create a feast incorporating health-promoting foods from all over the world that includes: Kale Chips, Za’taar Flaxseed Hummus, Carrot Ginger Soup, Mixed Baby Greens with Miso-Ginger Dressing, Lemon-Sage Salmon, Coconut Collards with Roasted Sweet Potatoes, Chana Saag with Toasted Quinoa, Pareve Chocolate Mousse, and Antioxidant-packed Chocolate Bark. Handouts with detailed information on the anti-inflammatory diet will be provided in addition to recipes.

Eat to Beat: Diabetes – Mon, March 26, 7:00-9:30pm
Following a diabetic diet to better manage your blood sugar can seem daunting but this class will show you how to do it effortlessly. Jackie has counseled many diabetics and pre-diabetics on how to get their blood sugar under control by getting into the kitchen and cooking delicious, healthy food. She cannot wait to share with you her knowledge and passion for what she calls “therapeutic cooking”. Cook your way to good health as we create: Cauliflower Leek Soup, Sushi Roll Edamame Salad, Broiled Cod with Ginger Miso Glaze, Pecan Crusted Chicken,, Lemon-Rosemary Quinoa Pilaf, Sauteed Greens with Garlic, Pareve Chocolate Mousse, Poached Pears with Raspberry Sauce. While snacking on Smashed Chickpea, Basil, and Radish Dip with pita chips and Parmesean Toasts with Pea Pesto, you’ll create Autumn Barley Salad with Roasted Butternut Squash, Cranberries, and Walnuts, Curried Carrot Soup, Roasted Brussels Sprouts with Apples and Pinenuts, Asian Noodles with Toasted Sesame Dressing, Ginger-Honey Glazed Salmon, Crazy Good Homemade Veggie Burgers and finish the evening with delicious Pear-Berry Crisp and Pareve Chocolate Coconut Cream Pie. It’s summer time and grocery stores and farmer’s markets are just overflowing with beautiful produce. Learn to make your own gourmet summer-inspired ‘fast food’ using delicious recipes, easy shortcuts, and awesome tips for eating healthy without breaking the bank. While sipping on refreshing Watermelon-Mint Coolers, you’ll create Panzanella Salad with Heirloom Tomatoes, Kale and Bok Choy Slaw, Herbed Flatbread with Hummus and Chopped Kalamata Olives, Quinoa and Black Bean Salad with Apricot Lime Vinaigrette, Tofu Coconut Curry and Pomegranate Chicken & Walnuts. Finally finish the evening with two sweet treats: Zucchini-Cranberry Muffins and Strawberry Rhubarb Cobbler. You’ll be amazed how these dishes come together in a flash!
